Black pepper

Black pepper (Piper nigrum) is a climbing plant of the Piperaceae family, cultivated for its dried fruit, known as peppercorn, which is used as a spice. When fresh and ripe, it is red and contains one seed. Black pepper is the ripe dried fruit, while green pepper is the unripe dried fruit, and white pepper is the ripe dried fruit without the skin.

Native to present-day Kerala, India, black pepper is widely cultivated in tropical regions. Used since ancient times for both its flavor and medicinal properties, it is the most commercialized spice in the world and common in various cuisines, notably due to its spiciness, due to piperine.

White pepper

White pepper is made up of just the seed of the pepper tree fruit, with the coloured skin of the pepper fruit removed. This is usually accomplished by a process known as retting, where fully ripe red pepper berries are soaked in water for about a week, during which the flesh of the pepper softens and decomposes. Rubbing then removes what remains of the fruit, and the naked seed is dried. Sometimes alternative processes are used for removing the outer pepper from the seed, including removing the outer layer through mechanical, chemical, or biological methods. In the past, the process used river currents, but today, more sustainable tanks and artificial structures are preferred.

Ground and whole white pepper is used as a seasoning in a variety of cuisines, with a different flavor from black pepper due to the absence of certain compounds from the skin. It is very common in recipes that require a more delicate, sophisticated flavor profile or in dishes that have white or light colored sauces.

Pink Pepper

Schinus terebinthifolius, known as red pepper tree, is a plant of the Anacardiaceae family, native to subtropical and tropical South America, including southeastern Brazil, northern Argentina and Paraguay. In Brazil, it is found in states such as Alagoas, Bahia, Espírito Santo, Mato Grosso do Sul, Minas Gerais, Pernambuco, Paraná, Rio de Janeiro, Rio Grande do Norte, Rio Grande do Sul, Santa Catarina, São Paulo and Sergipe.

The red pepper tree is a shrub or small tree, reaching 7 to 10 meters in height, with shallow roots. Its branches can be erect, inclined or almost climbing, adapting to various ecosystems, from dunes to swamps.

Because of its similarity to true peppers, its fruits are sold as “pink pepper” and used as a seasoning, with a milder flavor than black pepper.

Cloves

Cloves are the aromatic flower buds of a tree in the Myrtaceae family, Syzygium aromaticum. Native to the Maluku Islands in Indonesia, they are used as a spice and are available year-round due to the different harvest seasons in different countries.

The clove is an evergreen tree that grows from 8 to 12 meters tall, with large leaves and red flowers which grow in clusters. The flower buds start out pale, turn green and then bright red when ready to harvest, at which point they are 1.5 to 2 cm long.

Cloves are used in many cuisines around the world, adding flavor to meats, curries, marinades and fruits. They are also used to flavor hot drinks and are part of spice blends, such as those used in pumpkin pies and relish.

We work with MOQ of 10 tons per shipment, which may be comprised of different products in the same FCL. For smaller quantities and trial orders, please contact our sales team.

Do you have sterilized pepper?

We are pleased to say that we are one of the first companies to have its own steam sterilizer in Brazil. We can offer steam treated or ozone treated pepper to supply safe and high quality goods

What packaging will my product be shipped in?

We work with 25kg or 50kg PP or Kraft bags for Black pepper, white pepper and cloves. Pink pepper is shipped in 5kg vacuum sealed PE bags inside cardboard boxes. 

Where will my goods be shipped from?

With local presence in all major production spice areas of Brazil, Almada works mainly with Vitoria, Vila do Conde and Salvador ports, however this may change subject to vessel availability.

How fast can you ship my purchase?

Usually we take around 15-20 days to ship a product once contract is confirmed. This may change due to seasonal demand and vessel availability.
